As a chef, I have the privilege of connecting with farmers and fishermen who handle their catch and product with great pride and care. I highly respect the generations of fishing families, First Nations, and farmers that work hard to bring these delicacies to our plates. I feel honoured to represent them and their products here tonight.
Zeke Pellegrin
BC Spot Prawns - Strait of Georgia
Zeke Pellegrin is the owner of Highline Fishing Co. in Campbell River, BC. He’s passionate about the sea, the quality seafood he brings to shore, and the company he’s built.

Zeke harvested the BC Spot Prawns during the 2022 commercial season in May and June. Zeke flash freezes the prawns in sea water.
Paul Healey
Sunchokes - Burnaby
Paul and his wife Rebecca are the owner operators of Hannah Brook Farms. They have a farm in Burnaby and Maple Ridge. They grow an amazing variety of edible flowers, herbs, greens and vegetables. I have had the pleasure of using Paul's produce since 2008.

He is one of my longest suppliers and I am happy to represent him and his product tonight.
Bruce Clapp
Wild Canadian Geoduck - South Savory Island
Bruce Clapp has been a commercial diver for over 35 years. He harvested these clams on Monday.

Commercial divers handpick Geoducks at 20 to 50 feet deep under the water. Geoducks are harvested using a high-pressure water nozzle to liquify the sand around the clam.

Canadian Macro Kelp - Bamfield
Louis Druehl Ph.D., a recognized expert on kelp biology, with his wife, Rae Hopkins, has developed products and services unique to Canadian Kelp since 1982, from their home in Bamfield. Louis, retired from 36 years of teaching and researching seaweeds at SFU. He maintains the first commercial kelp farm in North America and continues producing kelp seed for kelp farmers and conservationists
